What is Sourdough Discard?

Sourdough discard is simply a portion of the sourdough starter that is discarded or removed. This step happens right before the starter is fed. Precious time, water, and flour went into the previous feeding, using the discard is a great to to reuse all that hard work in other recipes.

There are still great benefits to using the sourdough discard, similar to an active sourdough starter. The probiotics found in sourdough discard are great for your gut.
