Dutch Oven Rosemary and Parmesan Crusty Bread

I consider myself a pretty good planner and organizer. We thrive on meal plans around here. I have found that it makes part of my life smoother when I don’t have to face the dreaded question of “What are we going to have for dinner tonight?” I’ve also recently started planning our meals in the calendar on my phone. I set up a month’s worth of meals and schedule them to repeat. This was an absolute game changer for me and making my grocery lists..

Sometimes though, life gets the best of me and I completely drop the ball. It seems the late afternoon sneaks up on me some days and I haven’t even looked at what is scheduled. While I don’t have a problem switching meals around to different days, I kind of put myself in a bind a few weeks ago and was stuck with only one option. I needed some crusty bread, and fast. Honestly though, when don’t you need some fresh crusty bread? 

 While I have been experimenting more with sourdough, the tight spot I put myself in required me to pull out the packages of yeast and try to “whip” something together for my crew. I had followed a recipe before that called for yeast, but it was a sweeter bread recipe and we definitely needed something savory to go with our entrée. I looked around at other recipes and decided to try something new. To my surprise it was a big hit. Pretty sure we ended up eating more bread than the main dish that night. There’s nothing wrong with that though, right?

Tools:

  • Dutch oven
  • Parchment paper
  • Scale 
  • Spatula
  • Mixing bowl
  • Plastic wrap or damp tea towel.

Types of Yeasts:

  • Active Dry Yeast: If you are baking with active dry yeast you need to activate it with water first. This is included in the instructions below.
  • Instant Yeast: With instant yeast you can skip the step of adding water first. It has smaller granules and this means you can go ahead and add to all the dry ingredients.

Step-by-Step Instructions:

  • 1. Activate Yeast:
    • In a mixing bowl, combine the active dry yeast, sugar, and water. Let it sit for 5-10 minutes until foamy. 
  • 2. Add Ingredients & Mix
    • Sprinkle in salt, garlic powder, and rosemary. Then add parmesan and flour. 
    • Mix together ingredients with spatula. The dough will be very tacky. 
  • 4. Rise
    • Cover with plastic wrap or wet tea towel. 
    • Leave in the mixing bowl to rise for 1-3 hours to double in size. Timing may vary depending on the temperature of your house.
  • 5. Preheat
    • Preheat the oven to 400 degrees.
  • 6. Transfer &  Bake:
    • Transfer the dough to a lightly floured surface and form into a ball. Then place on parchment paper and lower into a Dutch oven. 
  • Bake with the lid on for 30 minutes. Then remove the lid for the last 10 minutes. 
  • Allow to cool completely, approximately 30 minutes, before slicing.

Tips:

  • When allowing the dough to rise, placing it in the oven (oven off) with the light on is a great place to put the dough. Other alternatives are on the counter and on the top of the fridge. 
  • While normally you need to preheat the Dutch oven before cooking, this recipe does not require that. If you do choose to preheat the Dutch oven, you will need to line with extra parchment paper. 
  • Freezing this loaf is easy. Simply allow the bread to cool completely, store in a freezer safe bag while making sure to squeeze out all the air. When you are ready to eat just thaw on the counter and heat in a 350 degree oven until warm.

Ingredients:

  • 1 cup of warm water (110 degrees )
  • 1 ½ teaspoons of dry active yeast
  • 3 tablespoons of sugar 
  • 2 teaspoons of fine sea salt 
  • 1 teaspoon of garlic powder
  • 2 tablespoons of rosemary
  • ½ cup of parmesan cheese
  • 3 cups of all-purpose flour (360 grams)
