These simple sourdough dinner rolls are unbelievably easy to make. Start them in the morning and enjoy them by dinner. Similar to my overnight sourdough cinnamon rolls, and sourdough sandwich bread, with little effort you will be enjoying dreamy bread in a short time.

Sourdough dinner rolls that are soft, fluffy, and pull apart easily. With a slight touch of sweetness and rubbed down with butter, you will not be able to resist.

Sample Bakers Schedule

8:00 pm: Feed sourdough starter (allow 8-12 hours for starter to be ready and active).

8:00 am: Combine ingredients.

8:30 am: Perform 3 sets of stretch and folds thirty minutes apart.

12:30 pm: Shape rolls. Cover and let rise.

4:15 pm: Preheat oven.

4:30 pm: Bake sourdough rolls and enjoy while warm.

While this is just a sample schedule you can adjust the time to suit your schedule better. You will need to take into consideration the temperature of your kitchen which might vary the proofing/rising times. My kitchen is normally 70 degrees and my starter is ready sooner than the average time. In very warm environments your starter could be ready to use in as little as 4-6 hours. 

Step-by-Step Instructions

1. Before beginning make sure your starter is fed, active, and ready to bake with.

2. Melt butter and allow to cool. Combine cooled butter, milk, sugar, and active sourdough starter. Set to the side.

3. In a separate bowl mix the flour and salt. Add the flour mixture to the wet.

4. Allow to rest for 30-60 minutes.

5. Begin stretch and folds. Perform 3 sets of stretch and folds every 20-30 minutes.

  • Grab the edge of one side of the dough, while still in the bowl, and gently pull up and fold across to the opposite side. Turn the bowl a quarter and repeat. Then three more times until you have moved around the bowl. This is one round of stretch and folds. You can wet the tips of your fingers with water if the dough is too sticky.

6. Cover and allow to rise about 50% in size. Times could vary depending how active the starter is and the temperature of your home. Should take approximately 3-4 hours.

7. Divide dough into 13 pieces weighing approximately 65-75 grams a piece. Shape by pulling the outside sides to the middle and rolling into a ball.

8. Place in a greased pan covered, and allow to rise another 3-4 hours.

9. Preheat oven to 375 when the rolls look puffy and have risen another 50%.

10. Bake for 20-25 minutes or until golden in color. Brush with melted butter fresh out of the oven and enjoy!

Tips & Storage

  • Place the rolls in the fridge before the second rise for 24 hours until you are ready to bake. Allow the rolls to come to room temperature and rise. Then bake like normal.
  • Cooled butter is best to use when following these instructions
  • Store the sourdough dinner rolls in an airtight container for up to four days. We like to wrap in a paper towel to reheat just a touch.
